After firing up over 2 million pizzas, the wood-fired oven at the heart of our restaurant and open kitchen needs some loving. We’ll be:
Letting the oven fully cool down (for only the third time ever)
Crawling inside to replace its worn-out floor stones one-by-one, by hand
Recuring the brand-new oven floor for the perfect new cooking surface.
Meanwhile, we’ll also refresh some paint and tackle a few overdue projects.
It’s a pretty massive undertaking, so we will be closed January 20–27 to get it all done.
We’ll plan to reopen on January 28 with a refreshed oven, rebuilt to bake you the best pizza we know how to make.
